- Drain pan: You may or may not need this item. If you love juicy turkey gravy, you can use this pan to catch them during the smoking process.
Be prepared to spend a lot of time on this dish. Smoking turkey will usually take a lot of your time, maybe around 6-7 hours.
How to Smoke a Turkey on a Pellet Grill?
I will show you how to make delicious smoked turkey with the following steps:
1. Prepare the turkey for smoke
Choose a turkey that is suitable for smoking, as mentioned above, you should choose a turkey between 12-15 pounds. If the turkey is bigger, it will take a lot of time and the smoked chicken flavor will not be as good.
If you choose a frozen turkey to smoke, make sure it is completely thawed. You should prepare in advance if you intend to use frozen turkey. It will take 1-2 days to defrost chicken in the refrigerator. Chicken should not be defrosted in the outside environment, harmful bacteria will grow very quickly.
Cut off the head and neck of the turkey. Removing the neck and head will make it easier to smoke turkey, which you can save for other dishes.
2. Brining the turkey
If you want your turkey bacon to be richer and more moist, proceed to brine. The best brine recipe is half a cup of salt, half a cup of sugar dissolved in 1 gallon of water. You should add some flavoring to the brine to soak the turkey. Soak for 12-14 hours. Your turkey will soak up the salt and flavor of the seasoning. Your turkey should be completely submerged in the brine to soak up the salt.

3. Start smoking
Once the turkey is done soaking, take it out and rinse it with cold water. Thoroughly dry the entire turkey with plenty of paper towels. Coat the turkey with your favorite seasoning sauce over the entire outer skin of the turkey, followed by canola oil to ensure a flawless finish during the smoking process. If you don’t have canola oil, you can substitute it with olive oil.
Set the recipe on your pellet grill to start smoking turkey.
You must first preheat your grill to 225°F for about 18 minutes. Then place the turkey directly on the grill without the pan. Be sure to place the turkey breast in contact with the grill.
Cover the pellet grill and smoke for between 2.5 to 3 hours. After 3 hours, increase the temperature to 300°F and cook for another 3 to 5 hours, depending on the size of the turkey you’re smoking. In my experience, it takes 30 minutes to smoke every pound of turkey. If your turkey weighs 15 pounds, it may take you 7 to 8 hours to smoke. Depending on the size of your turkey, determine the smoking time.
Use a meat thermometer and check the temperature of the turkey regularly. It should be adjusted to a moderate level and not overcooked.
